Doom

In the Virtual Jaguar's settings, enable:
"Doom Res Hack"
"Bios"
Then go to Manage Core Options and Save Game Options. Restart RA.
I tested the game on a Windows 10 PC with a potato integrated AMD chip and the game still would not run well. If the game runs well for you, though, you are done, enjoy the game. I went to RetroArch's system-level settings >> Drivers - and changed "video driver" to glcore. Then go back to Quick Menu >> Overrides and choose "Save game overrides" (This is not the same thing as the option from before, yay RetroArch and its inscrutable menus) After a restart, your game should run well (or at least as well as it did on real hardware.)
If it still does not run well, go back to core options and enable "Fast Blitter" This is a bit of a nuclear option because it can cause glitches, but your game will run faster. If it still doesn't run, upgrade your PC or play something else.
Finally, don't forget that the Jaguar controller had a numpad and that several game options were mapped to it: See this image for reference.
