Go back to the Old Castle, go into the top entrance, go left, get the copy ability, and take yourself all the way back. Or you could try your luck at the roulette, obviously.

You can also get it during the fight by swallowing one of the stray rocks it occasionally uses

Can confirm that getting the stone ability from the rocks it occasionally uses does work for the achievement. If it matters I made sure not to damage the boss in any way until I could get the Stone ability (including blocking damage).
