Finally! Did it with Ascalon and the Manticore Soul. Oh and the maxed out Golem Soul. And some rng luck, he didn't jump.

Tips:
1 - If he jumps, just slide under him;
2 - Amalaric Sniper soul has a combo with Skull Archers soul, when you charge the skull archer the sniper will appear and shot without wasting MP;
3 - When Gergoth drops the tower keep attacking him and looking at the map, when close to the ground just back away!

great tips all around, personally I like using the barbariccia soul for when he jumps or when I'm cornered (i also switch to the elfin robe and other intelligence boosting items/souls whenever i do that)

I probably have trash equipment and souls, but I'll never let that get me down!

There's a small degree of luck to this fight. If Gorgoth gets too close and does its bite attack, you can't dodge it. If it's too close when transitioning phases, it'll also instantly damage you. Good luck!

His attacks aren't too bad, just beware that, at the bottom floor, his inhaling bite attack can end up being unavoidable due to him being too close to the wall.

Just keep trying the rng. I got lucky and got a first phase where he didn't even attack just walk back and forth
