finally after a hell ton of bull crap I did it

Spend as little time as possible in the water to catch the fish, pushing up on the D-pad to get to the surface so that you get a good jump out of the water. Also, on the high trunks, time your jumps to avoid falling in between, try to minimize the wall "chomping"
