I believe I fixed it, I looked into the achievement, and one of requirements had an extra 0 ;)

Let's see here... there's Bob-omb Mountain, Whomp's Fortress, Jolly Roger Lagoon, The Desert Level, Tall Tall Mountain, Snowman Land, Tiny Huge Island, The Drowned Town Level, Rainbow Ride, and Rainbow Secret. Guess that's all of them!

There are 11 are does the Rainbow Bonus cannon not count because it's a bonus stage?

If you're having trouble, double-check all the courses. You might have missed one, especially if you chased another achievement that required getting a star cannonless. I missed the one in Cool, Cool Mountain.

The one in "Wing Mario Over The Rainbow" was not needed for me. The achievement poped up to me when I opened all the cannons in the main courses.
