for some reason (for the in-game counter, not cheevo related) i had to do the durian one twice. not sure if it somehow didn't save after i did it the first time a few days ago or what happened. but just in case, if anyone else is at 5/6 but remembers getting all 6, try doing the durian one again.

ugh @SatanicSage i have the exact same glitch on my save file, stuck at 5/6 shines on daisy cruiser. unfortunately for me i have gone back and recollected every shine and none have managed to prompt it to update to 6/6.

looks like this is gonna screw me out of 100% completing everything! ive gotten every shine and blue coin prior to this :(

i wonder if there's any way to fix it in memory.

do you have any more info about how you managed to prompt it to get from 5 to 6? were you using a certain character? did you do it all in the same session, or did you close and reload the game? did you get any shines in other levels prior to coming back to ths one? anything you can give me that might help me recreate your situation would be appreciated, although i recognise it was a few weeks back by now.

Commenting here to say the same thing. Apparently this Cheevo doesn't really work?
