You can cheese this by going to Papu's Pyramid and wait for all the characters to leave you at 8th place.
Drive into the crates at the start/finish line and try to spawn a mask. Now wait at the end of the first corner in the square spiral at the pyramid. When the characters are approaching after the first lap (look for them on the map) activate your mask and reverse drive by hold down and see how many you can hit in the tight corridor.

Another easy way to do it is to hit someone and stop the kart; the other driver will keep bouncing.

Papu's piramids is the best place to do all the items archievements. Just wait to have lucky starting the race. And attack!

I found the most success in just getting 10 wumpa fruit and specifically hitting one kart over and over. You should have enough time, and the victims don't have to be unique.

Popped for me while having a blue orb active and getting a mask in the next crate (I only hit one opponent with the mask).
