just a little tip. i know i dont got this yet but easiest place to do this at is the mall. just do a shootout in the mall and you can get a 6 star in about 3 to 7 minutes

Only possible after completing "Rub Out". Don't be stupid like me and try this early, you'll never get past five-star wanted level.

i calculated my time with the mall tip. only takes about 2 minutes to get a 6 star inside the mall. also what makes it so easy and fast is the fact all you gotta worry about is pedestrians and regular cops. so treats itself as a 2 star even if your on a 5 star and the stars go up really fast. my guess is it was intentional by rockstar to get the stars faster this way as it can be a nod towards mall shootouts in reality

I didn’t do this at the mall but rather in little havanna at the garage where you have to drop off the stolen tank if that makes sense. Just hide in there and you will have a good view outside so you can take everyone out with ease, but helicopters won’t be able to hit you. The road is also relatively far away so you will never suddenly be surprised by cops arriving. Didn’t even aim to unlock this achievement, just happened because I was fooling around, so maybe this tip will help others, too.
