You can find one Jetski at the film studio and one around the place where Colonel Cortez yatch was in Vice city

Okay, so this was epic. I did the final jump with a jet ski on fire. It was really damaged from collisions, and the moment I took the ramp, it started burning by the friction with the ramp. The jump was on slow motion, me worried it would explode and I would fail and have to get to the island and to the jetski again, but I made it all the way and the jet ski exploded just as I got the achievement, killing me in the process. Probably the coolest way I got any achievement.
