Don't be dumb like me. I misread the achievement and did the entire fight with the boomerang only. You ONLY need to switch to boomerang only on the last knight.
10 minutes of my life I'll never get back :P

Fun fact: I originally coded it for boomerang only for the whole fight but the first part was merely just super tedious and not hard.

I think it'd be good to mark *all* the missable achievements as missable. I tend to do a blind playthrough and then go back and collect all non-missables on that file before starting a new file to collect missables. When I see only missables left I know it's time to start a new file, and having all missables categorized as missable makes it easier to see that at a glance.
