    For some reason the giant goron doesn't ask for my shield, only talks to me...

    Correct. The Biggoron will not ask for the shield until you've defeated Vaati and see him in the post-game. After you feed him your shield, you also will have to go off and kill a certain number of enemies before he spits it back out as a Mirror Shield.

    I don't remember the exact number of enemies, I just recommend giving him the shield as soon as you load up the post-game, go off and get a bunch of the other achievements done, and when you return it'll no doubt be completed.
