After the initial cutscene, stay put in the hole to your right until boss hops over you. Then go to the two middle platforms directly underneath the middle of the upper stone platform. Facing right, make sure the edge of Yoshi's right foot is directly to the left of the black outline in the middle of the platforms. Then shoot your egg straight up. This should destroy both platforms with one egg, leaving you to destroy a third or fourth set of platforms with your second egg if you're having trouble making this boss jump into a 2 platform wide hole
