Why is this one missable? Is it because it requires killing the eyes or...?

Probably that ^ Going into this set rn, IIRC you don't actually have to attack the eyes to defeat wall face, although I'm pretty sure they can be revived mid battle. Could be wrong I'm just going off memory but I'll confirm at a later point
