I keep seeing people saying/writing that hard mode disables the checkpoint barrels but it doesn't. At least for the SNES version it does not. So if you are still getting (star) checkpoint barrels, don't worry, it's still hard mode as long as there are no DK barrels

Question: Does the save file remember if you are in hard mode, or do you have to enable hard mode every time you open the save?

Tip for hard mode bosses and some animal levels where you don't get a free kong at the start: backtrack to any level you have beaten, enter it, then start and select to exit it, free kong!
